Clean Eating Recipe: Grilled Halibut with Mango Avocado Salsa

Ingredients:

  • 1 medium ripe mango (I like mine very soft because the juices mingle with the avocado.
  • 1 medium ripe avocado
  • 2 halibut fillets (other thick white fish like mahi magi, cod, or sea bass will also work)
  • olive oil
  • grill spray/olive oil spray
  • 1 lime

Directions:
  • Cover a section of your grill with aluminum foil. Preheat the grill to medium-high heat. 
  • Place your rinsed and dried halibut fillets (other thick white fish will also work) in a baking dish with 1-2 tbsp. of olive or canola oil and the juice from half a lime. Season with salt and pepper. Let the fillets sit for as long as you have time for (5-10 minutes is good). 
  • While your fish is marinating, make your salsa by slicing your mango and your avocado into chunks, and mix them together with the juice from the other half of your lime. Set aside.
  • Spray the foil-covered section of your grill with grill spray or olive oil spray (or brush with olive oil if you don't have spray). Grill your fish until cooked, 4-5 minutes per side. 
  • Place cooked fish on plates and cover with salsa. Enjoy.

Edamame Fried Brown Rice with Shrimp, adapted from Skinny Taste. I used frozen raw shrimp and frozen brown rice from Trader Joe's. I thawed the shrimp and then sautéed them using a light olive oil spray, and seasoned them with salt, pepper, and garlic powder.

Clean Eating Recipe: brown rice with roasted beets, beet greens, roasted zucchini, feta cheese, and toasted pine nuts.

    Ingredients:
  • 2 cups cooked brown rice (I use Trader Joe's frozen brown rice - so easy!)
  • 1 bunch beets with tops (any kind)
  • 1 medium zucchini
  • 1/4 cup pine nuts
  • crumbled feta cheese (I used TJ's fat free)
  • olive oil
  • garlic powder
  • salt and pepper


    Directions:
  • The first step is roasting the beets. This takes about 1 hour, so plan ahead! You could roast the beets ahead of time and refrigerate them until you are ready to eat.
  • I cut the tops off the beets and set them aside, and cut off the ends of the beets, leaving the skin on. I wrapped them in aluminum foil and placed the foil packet directly on the middle rack of a 350 degree oven for about 1 hour (you want them to be easily pierced with a fork).
  • When beets are done cooking, the peels should slide off easily. Tip: Wear gloves when peeling if you are using red beets, and wear an apron - they stain!!
  • Chop beets into medium sized chunks and set aside.
  • While the beets are cooking, start boiling a pot of water.
  • Wash and pat dry your beet tops. I personally do not like the stems, so I sliced the leaves off the stems.
  • When water is boiling, add the beet greens and blanch for about 3 minutes. Drain them in a colander and run them under cool water.
  • When your beets are done roasting, turn the oven up to 450.
  • To roast your zucchini, slice it lengthwise into quarters (you want the pieces to be about the size of sliced carrots).
  • Place zucchini on a cookie sheet. Drizzle with olive oil and sprinkle with a bit of garlic powder if you like.
  • Roast on the top rack of the oven at 450 for about 5 minutes or until the ends of the zucchini are beginning to brown.
  • While zucchini is cooking, toast your pine nuts in a hot pan until golden.
  • When zucchini is done, chop into small pieces.
  • When all your veggies and nuts are done cooking, place cooked rice in a large bowl and add chopped beets, cooked beet greens, and chopped zucchini. Add as much as you like. Add feta cheese, pine nuts, about 1 tsp. of olive oil, and season with salt and pepper.
  • Eat and enjoy!

Cheesy Quinoa Cups from Iowa Girl Eats. I did not use ham and I added tomatoes and beet greens. This is a great recipe for kids, and you can use whatever veggies you have on hand.

My Adventures in Cleaner Eating (& Free $10 Credit at Vitacost.com Health Foods)

As some of you may know, I have recently embarked on a new adventure: trying to eat sugar-free/"clean" for 30 days. Why am I doing this? Many reasons, actually. I have been eating whole, unprocessed foods whenever possible for a couple of years now, and after having a child I naturally incorporated more whole foods into my diet because I want my daughter to have the best start in life and learn to love foods that are good for her. However, I have never really made a concerted effort to eliminate processed foods from my diet. After doing some more research on the effects of sugar on the brain and body, I decided that I wanted to try, one day at a time, to eat better. I have been trying to lose the last 20 pounds of baby weight for over a year now, but I've hit a plateau and the scale hasn't budged in over 9 months. So that is one motivating factor. I also struggle with a mood disorder and I was amazed at the research on the food/mood connection. I already do things each day to maintain mental and physical health, so I am trying to think of eating "clean" as another form of medicine, if you will. It's a gift I am giving myself each day to fuel my body in the most natural way possible. I chose 30 days because it seems doable and not such a huge commitment that I will feel like giving up.

What does sugar-free/clean mean to me? I've seen lots of different definitions of "sugar-free", "clean", "whole", "natural", etc. Some would suggest I eat no form of sugar whatsoever, even unrefined sugars or sugar substitutes. Some would suggest only foods with less that 5 ingredients on the label. Some would suggest only organic produce and humanely raised meats. These different rules left me feeling overwhelmed. So I've decided to define what these terms mean to me. Or rather, I'm choosing a term for myself - "nurturing foods," since that is my ultimate goal - to nurture my mind and body.

    My Nurturing Foods List
  • All Fruit and Veggies
  • Whole grains (no white flour)
  • Lean Meats (fish, poultry only)
  • Dairy Products with no added sugar (yogurt, cheese, etc)
  • No white rice
  • No processed sugar
  • Limited unrefined sugars (such as honey or maple syrup)
  • Very Limited sugar substitutes (diet coke only occasionally)

Right now I'm still having flavored creamer with my morning coffee because I haven't found another alternative that works for me. I'm open to changing this if I find something that I like, but for now I'm okay with that being my only sugar for the day.

I may also stray from these guidelines occasionally when eating with friends if nurturing foods are not available. Because being with friends is also nurturing, and I don't want to miss out on socializing opportunities because of restrictive eating habits. I will do my best to keep nurturing foods with me so that I'm prepared for these situations, but I think flexibility is important. The last thing I need is to become obsessive about food, even it's an obsession for eating healthy.

So there you have it. I'm putting it out there to hold myself accountable, and also to invite others to join me in finding your own nurturing foods. People who do things together are more successful!

CVS Shopping Trip 3/18/12

Periodically I will try to post examples of my coupon shopping trips so that you can see exactly how this couponing thing works! This week there are some really good deals on things my family uses often, so I ended up going to CVS, Rite Aid, Vons, and Trader Joe's. And it was raining. It was quite an exhausting afternoon, but getting the best deals usually means more work.

In total, I paid $15.19 vs. $47.86 at full price. That is a $32 savings, or 68%! Not too bad.



As a side note, when you watch "Extreme Couponing" and you see people getting a 100% savings or close to it, it's because they are buying only items that they can get for free with coupon match-ups. They are not picky about what type of items they buy - they just buy whatever is on sale, usually for around $1 since that's the value of most coupons. For me, there are certain items that I buy brand-specific for my family (such as deodorant and facial products), and other items that I buy based on the best deals (e.g. toothpaste and soap). I also buy things I can get for free regardless of the brand, and then I donate them!

Frugal Recipes: Turkey & Hidden Veggie Bolognese

Today I had some spinach from the farmer's market that wasn't going to stay good much longer, so I decided to make a puree and figure out what to do with it later. I make purees when I have produce that is near the end of its time, and it can be frozen and then used later in recipes. This helps me to avoid wasting good produce.

I also had a goal to get creative with some of the things in my stockpile and avoid doing too much shopping this week. I always have lots of dry pasta and pasta sauce on hand since there are so many great deals for it. Most of my boxes of pasta I got for less than a dollar each. I also usually have lean ground turkey in my freezer since there are lots of sales on that as well, and I don't eat beef. So...pasta, sauce, ground turkey...I smell a bolognese!

I'm always experimenting with new ways to sneak veggies into foods for my daughter, so I decided to add extra veggies to the sauce. It ended up being a delicious dish that both my daughter and I thoroughly enjoyed!

Turkey & Hidden Veggie Bolognese
Ingredients:
  • 10 oz Lean Ground Turkey (half a tray)
  • 2.5 cups Pasta Sauce of your choice (I used Classico Tomato & Basil)
  • 8 oz of dry pasta of your choice (I used Farfalle)
  • 1/4 cup pureed vegetable (I used spinach)
  • 1/4 cup finely chopped carrots
  • grated parmesan cheese if desired
Cook pasta according to directions. While pasta is cooking, spray a pan with olive oil or pam and cook turkey over high heat until done. Put sauce in a saucepan, add pureed and chopped veggies, and cook over medium heat. Add seasonings to taste if veggie flavor is too strong (I added garlic powder). When turkey is cooked, add to sauce. Pour over cooked pasta and add cheese if you like.

I added sliced black olives to my sauce because I love them, and you could also add other types of finely chopped veggies like celery or mushrooms, depending on what you like or what you have on hand.

The gas giant Jupiter will be the focus of attention for stargazers at a free, public viewing with the powerful Keck Telescope Friday, Feb. 17. The viewing, which begins about 7 p.m., lasts several hours. The observatory opens its doors to the public every third Friday of the month in conjunction with the Santa Barbara Astronomical Unit, whose members bring their own telescopes to Westmont for the public to gaze through. This week, I scored 6 FREE speed stick/lady speed stick deodorants at Albertson's!! How did I do this? The magic of coupon match-ups. Let me explain...

Albertson's is currently offering a BOGO Free(Buy one, Get one free) deal on speed stick deodorant. There was also a BOGO Free speed stick coupon in the newspaper insert on 1/29. I had 3 of these coupons, so I got a total of 6 free deodorants. Score!

Tip: Be sure to read the fine print on the coupon. It says "up to 3.99" so be sure you check the price and grab the deodorants that are 3.99 and not higher, otherwise it won't be totally free.

  • Carpinteria Seal Sanctuary, all weekend - This will be a great weekend to check out the Carpinteria Seal Preserve, as this is the time of year that many of the seals give birth. Many of them are pregnant right now, and once one gives birth, apparently the others will be "inspired" to give birth too! It's pretty amazing to watch a baby seal be born. Frugal Recipes: Mom's Secret Veggie Muffins

My 1 year-old has started to reject any and all vegetables that I offer her, even though she used to love them! I have desperately been trying every way I can think of to disguise them so she will eat them. I started looking on mommy message boards for ideas of how to get kids to eat veggies, and I found a recipe for kid-friendly veggie muffins. I tweaked the recipe a little bit to my taste (and the veggies I had on hand). I used my own homemade veggie purees, which I think were not quite liquid-y enough and made the muffins come out quite dense. They tasted pretty good, though! When I offered one to Carly, she practically INHALED it! She actually grabbed the muffin out of my hand because I wasn't breaking off pieces fast enough, and she wanted to just shove the whole thing in her mouth. Little did she know there was broccoli, tomato, spinach, and sweet potatoes in there! BIG WIN for mom!

Here is the recipe!

Mom's Secret Veggie Muffins

Ingredients:
  • 2 cups flour (I used whole wheat flour)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup brown sugar
  • 1/4 cup butter, softened (I used light butter)
  • 1 egg
  • 3 cups pureed vegetables (use jarred baby food or your own homemade purees thinned down to the consistency of baby food)
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • 1 tsp maple syrup


Baking Instructions:
  • Preheat oven to 350 degrees
  • Spray muffin pan (or use cupcake/muffin liners)
  • Mix all ingredients and mix with an electric mixer until well-blended.
  • Fill muffin tins 2/3 full with batter
  • Bake 20-25 minutes and test for doneness with a toothpick
  • Cool in the pan
  • Feed to hungry child!!

Local Happenings 1/27-1/29

  • SBIFF "Applebox" Free Movie screening for families - Saturday 1/28, 9:30 am - Noon. Arlington Theater. K-9 Pals volunteers will be participating in and bringing out adoptable pups to the 2012 edition of the S.B. International Film Festival (SBIFF) children-centric screening program called AppleBox. AppleBox celebrates the families of the local S.B. community by allowing children the opportunity to be exposed to and intrigued by film.
    This rare opportunity includes free admission, pre-movie entertainment, and popcorn for attendees.
    The first installment of AppleBox features a 9:30 am red carpet walk, followed by events including face painting, arts and crafts, photo opportunities, live music, and stage performances by--of course--dogs.
    The event concludes with a screening of the independent Australian film, Red Dog. Based on a true story, this family film features an irresistibly lovable wandering dog that jumps in the front seat of a young couple's car on their way to work. My Albertson's Shopping Trip 1/15/12

I thought I would give my readers (the few of you there are!) an idea of what I buy on a typical shopping trip. I usually shop at Albertson's for most of my coupon shopping because it is just around the corner from my house, and Vons is about 10 minutes away (although Vons doubles coupons, so if there is a great deal, I'll go there too). I also shop at Trader Joe's every week to buy anything I can't buy with coupons at another store. Sometimes things are still cheaper at TJ's than another store even with a coupon, so I always comparison shop. TJ's DOES take coupons, although it's rare to find a coupon that you can use there because most of the products are their own TJ brand.

Here's what I bought at Albertson's this week:

  • 2 boxes Multigrain Peanut Butter Cheerios (on sale $2.50 each, used a $1 off 2 coupon). Cost = $2 per box
  • 1 box Dulce de Leche Cheerios (on sale $2.50, used a .75 off coupon) Cost = $1.75 per box
  • 3 boxes Barilla Pasta (on sale B2G1 free, used a $1 off 2 coupon) Cost = .66 per box
  • 2 Classico pasta sauces (on sale 2/$4 - no coupon but still cheaper than the ones I had coupons for) Cost = $2 each
  • 2 Ken's Italian salad dressing (on sale $2 each, used 2 $1 off coupons) Cost = $1 per bottle
  • 2 Sun Bird Asian seasoning packets (on sale $1 each, used BOGO Free coupon) Cost = .50 per packet
  • 2 boxes Skinny Cow Candy (on sale 2/$7. No coupons for this, so it was a splurge, but at least it was on sale!) Cost = $7 for 2
  • 2 Yoplait Greek Yogurts (used $1 off 2 coupon) Cost = $1.20 each
  • 2 boxes Boca Frozen Chik'n Patties (on sale 2/$7, used $1 off 2 coupon) Cost = $3 per box
  • 1 Large pack of blueberries (on sale $2.99) Cost = $2.99
  • 1 Aveeno Baby Wash (on sale $5.99, used $1 off coupon) Cost = $4.99

I also used one Albertson's Doubler Coupon which deducted $1 from my total (you can only use one per transaction).

Total Paid: $37.22
Total Coupon Savings: $8.50
Total Store Sale Savings: $26.84
Total Savings: $35.34 or 49%

I paid a little more than half the full price value of these items! On "Extreme Couponing," they often have over a 90% savings. Keep in mind though that most of the stores they visit have more lax coupon policies, including doubling every coupon no matter the value. Stores in California rarely do this. And the "extreme couponers" are buying the cheapest things in the store, no matter what they are. I'll write another post about the myths and facts of Extreme Couponing later! But hopefully this gives you an idea of how I do my "moderately extreme" coupon shopping!

Local Happenings 1/13/12

Starting today, I'm going to include a special "local happenings" topic into my repertoire of posts! My goal is to have one local-focused post every Thursday or Friday, specifically focusing on events or happenings on the cheap around the area for the coming weekend. And of course I will continue to post other types of local deals throughout the week as I become aware of them. Local Happenings this Weekend:

  • Los Padres National Forest "Fee Free Weekend" Jan 14-16. - in all areas of the LP National Forest where an Adventure Pass is normally required, (such as Red Rock ), the fee is being waived in recognition of MLK Jr. Day. With the beautiful weather expected this weekend, now is a great time to take advantage of what our National Forest has to offer, and it's free!

  • ONE Children & Maternity Overstock Sale - Saturday 1/14, 10 AM-2 PM. - If you are a mom or expecting, you need to check out ONE in Buellton! Trust me, it's worth the drive when they have a sale! This weekend they are having an overstock sale - 20% off storewide, 40% jackets, gloves, and hats, and only $2 for certain items.

  • Star Parties at the SB Natural History Museum - Saturday 1/14, 7:30-10 PM - On the second Saturday of every month, the Museum offers public observations at the Museum's Palmer Observatory. These Star Parties are hosted by members of the Santa Barbara Astronomical Unit, who provide telescopes and their expert knowledge of the night sky. Star Parties are held in conjunction with Evening Exclusive planetarium shows. FREE for members. Non-members: $2/adult and $1/child.
